A vibrant and flavorful pasta salad featuring a tangy homemade Italian dressing, zesty pepperoncini, and a medley of fresh ingredients. Perfect for gatherings, picnics, or as a side dish.

Ingredients

Rotini pasta

Genoa salami, sliced

Pepperoni, sliced

Cherry tomatoes, halved

Green bell pepper, diced

Yellow or orange bell pepper, diced

Red onion, finely chopped

Black olives, halved

Pepperoncini, sliced

Mozzarella pearls

Fresh parsley, chopped

Parmesan cheese, grated

Instructions

  1. In a large pot of salted boiling water, cook the rotini according to package directions until al dente. Drain and rinse under cold water to stop the cooking process.
  2. In a bowl or jar, combine olive oil, red wine vinegar, lemon juice, garlic, dried herbs, salt, and pepper. Whisk or shake until well combined.
  3. In a large mixing bowl, combine the cooled pasta with salami, pepperoni, cherry tomatoes, bell peppers, red onion, olives, pepperoncini, and mozzarella pearls.
  4. Pour half of the prepared dressing over the salad and toss to coat. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Before serving, toss the salad with the remaining dressing. Garnish with fresh parsley and grated Parmesan cheese.
