Easy Funeral Potatoes are a classic American comfort food casserole featuring creamy hash browns, cheesy sauce, and a crispy buttery cornflake topping. Perfect for holidays, potlucks, and family dinners.

Ingredients

3/4 cup butter, divided

1 medium onion, diced

2 pounds diced hash browns, thawed and cubed

2 cans (10.75 oz each) condensed cream of chicken soup

2 cups sour cream

2 cups grated cheddar cheese

1/2 teaspoon salt

1/2 teaspoon black pepper

3 cups corn flakes cereal, lightly crushed

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt 1 tablespoon of butter over medium heat. Add the diced onion and sauté until soft and translucent.
  3. In a large mixing bowl, combine the sautéed onions, thawed hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, grated cheddar cheese, salt, and pepper. Mix until well combined.
  4. Transfer the mixture into a greased 9x13-inch baking dish.
  5. In the same skillet, melt the remaining 1/4 cup butter over medium heat. Add the crushed corn flakes and sauté for 2-3 minutes until lightly browned.
  6. Sprinkle the buttered corn flakes evenly over the casserole.
  7. Bake for 40-45 minutes, or until the top is golden brown and the casserole is hot and bubbly.
  8. Allow to cool slightly before serving.

Notes

  • Soup Substitutes: Use cream of celery or cream of mushroom soup instead of cream of chicken for variation.
  • Onion Preparation: For milder onion flavor, add diced onions directly without sautéing.
  • Hash Brown Style: Shredded hash browns can be used instead of cubed for a different texture.
  • Topping Alternatives: Substitute corn flakes with crushed Ritz crackers or potato chips for the topping.
  • Storage: Refrigerate leftovers in an airtight container for up to 3 days.
  • Reheating: Reheat in a 350°F oven for 20 minutes; add fresh crushed corn flakes on top if needed for crunch.
