Ingredients

8 ounces cream cheese (softened)

2 large chicken breasts

1/2 teaspoon garlic powder

Salt & pepper to taste

1 tablespoon butter

1 tablespoon olive oil

1/2 medium onion, chopped

3 cloves garlic, minced

3/4 cup chicken broth

1/2 teaspoon Italian seasoning

1/4 teaspoon crushed red pepper flakes

Fresh chopped parsley (optional)

Instructions

  • Microwave the cream cheese until very soft, then cut it into smaller pieces and set aside.

  • Slice the chicken breasts lengthwise to create 4 thinner pieces. Season with garlic powder, salt, and pepper.

  • Heat butter and olive oil in a skillet over medium-high heat. Cook the chicken for 5-6 minutes on each side or until golden and fully cooked (165°F). Transfer to a plate.

  • In the same skillet, reduce heat to medium and sauté the chopped onion for 5-7 minutes until softened and lightly browned.

  • Stir in the garlic and cook for 30 seconds.

  • Add chicken broth, cream cheese, Italian seasoning, and red pepper flakes. Stir until smooth, ensuring the cream cheese fully melts.

  • Return the chicken to the skillet and simmer until heated through, seasoning with more salt and pepper as needed. Garnish with fresh parsley if desired.

Notes

  • You can swap half of the chicken broth with dry white wine for a richer flavor.

  • Chicken thighs can be used instead of breasts, though they may require slightly more cooking time.
