Ingredients

5 Persian cucumbers

½ teaspoon salt

½ tablespoon sesame oil

¾ tablespoon light soy sauce

1 tablespoon sugar (adjust to taste)

¾ tablespoon rice vinegar

1 tablespoon chili oil (optional)

1 tablespoon sesame seeds (optional)

Instructions

  • Rinse cucumbers thoroughly.

  • Slice cucumbers thinly, preferably on a diagonal.

  • Place slices in a bowl, sprinkle with salt, and let sit for 10 minutes.

  • In a separate bowl, mix sesame oil, soy sauce, sugar, vinegar, and chili oil until sugar dissolves.
