Dragon Noodles are a quick and flavorful stir-fry dish with a perfect balance of spicy, sweet, and savory flavors. Featuring tender noodles, savory beef, crunchy cashews, and a kick from chili garlic sauce, this dish is customizable to suit all tastes. It's ideal for a weeknight dinner, offering a delicious combination of ingredients that are sure to satisfy.

Ingredients

8 ounces lo mein noodles (or ramen)

1 pound ground beef

2 tablespoons sesame oil

1 tablespoon garlic, minced

1 tablespoon fresh ginger, grated

1 tablespoon soy sauce

2 tablespoons chili garlic sauce (adjust for heat preference)

3 tablespoons brown sugar

1/4 cup green onions, sliced

1/4 cup cashews, chopped

2 cups broccoli florets

Salt and pepper to taste

Instructions

  • Cook the noodles and broccoli: In a large pot of boiling water, cook the noodles and broccoli together for 6-7 minutes, until the noodles are tender and the broccoli is bright green. Drain and set aside.

  • Prepare the sauce: In a bowl, combine soy sauce, chili garlic sauce, brown sugar, garlic, and ginger. Stir until the sugar dissolves.

  • Cook the beef: Heat sesame oil over medium-high heat in a large pan or wok. Add ground beef, season with salt and pepper, and cook until browned. Break the beef into small crumbles as it cooks (about 4-5 minutes).

  • Add the sauce: Pour the sauce into the pan with the beef and simmer for 1-2 minutes to combine the flavors.

  • Combine the noodles: Add the cooked noodles and broccoli to the pan with the beef and sauce. Toss everything together until evenly coated.

  • Garnish and serve: Sprinkle sliced green onions and chopped cashews on top and serve immediately.

Notes

  • Adjust the spice level by adding more or less chili garlic sauce.

  • Substitute beef with crumbled tofu, tempeh, shrimp, or ground chicken to cater to different preferences or dietary needs.

  • Add more vegetables like bell peppers or snow peas for extra crunch and nutrition.

  • Reheat leftovers by adding a splash of water or broth to loosen the sauce if it thickens.
