Dill Pickle Pasta Salad is a tangy, creamy, and refreshing dish that combines tender pasta with crunchy dill pickles, sharp cheddar cheese, and a zesty dressing infused with pickle juice and fresh dill. Ingredients

3 cups cooked pasta (elbow or rotini)

1 cup chopped dill pickles

¼ cup pickle juice

¾ cup cubed cheddar cheese

¼ cup red onion, finely diced

2 tbsp chopped fresh dill

½ cup mayonnaise

¼ cup sour cream or plain Greek yogurt

½ tsp garlic powder

Salt & pepper to taste

Instructions

  1. Cook pasta according to package directions. Rinse under cold water and drain.
  2. Whisk together mayonnaise, sour cream (or Greek yogurt), pickle juice, garlic powder, salt, and pepper until smooth.
  3. In a large bowl, toss the cooked pasta with chopped dill pickles, cubed cheddar cheese, diced red onion, and fresh dill.
  4. Pour the dressing over the pasta mixture and stir until everything is evenly coated.
  5. Chill the salad in the refrigerator for at least 1 hour before serving to allow the flavors to meld.
