Neapolitan pizza dough is the foundation of a traditional pizza with a light, airy crust that contrasts perfectly with rich toppings. This simple recipe results in a crispy, chewy base, ideal for an authentic pizza experience.

Ingredients

500g (4 cups) all-purpose flour

325ml (1 1/3 cups) lukewarm water

2 teaspoons salt

1/2 teaspoon sugar

7g (1 packet) active dry yeast

1 tablespoon olive oil (optional)

Instructions

  1. In a small bowl, dissolve the yeast and sugar in the lukewarm water. Let it sit for 5 minutes, or until foamy.
  2. In a large mixing bowl, combine the flour and salt.
  3. Make a well in the center of the flour mixture and pour in the yeast mixture (and olive oil, if using). Stir until a dough forms.
  4. Transfer the dough to a clean surface and knead for about 10 minutes until smooth and elastic. If too sticky, sprinkle with more flour.
  5. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let rise for 1 to 1.5 hours, or until doubled in size.
  6. Once risen, punch the dough down, divide it into 2 equal portions, and shape into balls. Let rest for 10 minutes.
  7. Preheat the oven to 500°F/260°C, placing a pizza stone or baking sheet inside to heat.
  8. Shape the dough into circles by pressing and stretching with your hands. Place on parchment paper.
  9. Top with your favorite ingredients and bake for 7-10 minutes, or until the crust is golden and the cheese is bubbly.

Notes

  • For whole wheat dough, substitute half of the all-purpose flour with whole wheat flour.
  • For garlic-infused dough, add 1-2 minced garlic cloves to the mixture.
  • For herb-flavored dough, add dried oregano, basil, or thyme to the flour mix.
  • Refrigerate dough for up to 2 days or freeze for up to 3 months for future use.
  • If using a stand mixer, knead dough for 6-8 minutes on low speed using a dough hook.
