Ingredients

Ground beef (80/20 blend recommended)

Beef (for crispy topping)

1 large onion, thinly sliced

Cheddar cheese, grated

2 tbsp sour cream

1 tbsp Dijon mustard

1 tbsp Worcestershire sauce

Salt and pepper, to taste

4 brioche burger buns

2 tbsp butter (for toasting buns)

Instructions

  • Cook the beef: In a skillet over medium heat, cook the beef until crispy. Transfer to paper towels to drain.

  • Caramelize onions: In the same skillet, remove most of the grease, keeping a light coating. Add onions and cook for 10–15 minutes until soft and golden. Season with salt and pepper.

  • Make patties: Mix ground beef with Worcestershire sauce, salt, and pepper. Shape into 4 patties, slightly larger than the buns.

  • Cook burgers: Grill or sear patties over medium-high heat for 4–5 minutes per side (for medium). In the last minute, add cheddar cheese to melt.

  • Toast buns: Spread butter on brioche buns and toast until golden.

  • Assemble: Mix sour cream and Dijon mustard. Spread on the bottom bun. Add patty with melted cheese, crispy beef, and caramelized onions. Top with the other bun half and serve hot.

Notes

  • Use an indentation in the center of each patty to reduce shrinking.

  • Greek yogurt can be used instead of sour cream for a lighter sauce.

  • Add jalapeños or hot sauce for a spicier version.

  • Patties can be made ahead and stored in the fridge overnight.

  • Store leftovers in airtight containers for up to 3 days.

  • Reheat patties in a skillet and toast buns separately for best results.
