12 oz linguine pasta
2 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tbsp olive oil
Salt and black pepper, to taste
For the Cowboy Butter Sauce:
4 tbsp unsalted butter
4 garlic cloves, minced
1 tbsp Dijon mustard
½ tsp paprika
½ tsp red pepper flakes (adjust to taste)
1 tsp lemon juice
½ cup heavy cream
½ cup grated Parmesan cheese
¼ cup chopped fresh parsley
Cook Pasta: Boil salted water in a large pot. Cook linguine until al dente per package instructions. Drain, reserving ½ cup pasta water.
Cook Chicken: In a large skillet, heat olive oil over medium. Season chicken with salt and pepper. Sauté until golden and cooked through. Remove and set aside.
Make Sauce: In the same skillet, melt butter. Add garlic; cook until fragrant. Stir in Dijon, paprika, red pepper flakes, and lemon juice. Pour in cream and add Parmesan, stirring until creamy.
