Cinnamon Roll French Toast Roll-Ups are a delicious combination of two favorite breakfast dishes: cinnamon rolls and French toast. These roll-ups are crispy on the outside, warm and gooey on the inside, with a perfect balance of cinnamon sweetness.

Ingredients

10 slices white sandwich bread

3 tablespoons butter, melted

3 tablespoons brown sugar

2 tablespoons ground cinnamon

For the French Toast Coating:

3 large eggs

1 tablespoon milk

½ teaspoon ground cinnamon

½ teaspoon vanilla extract

For Cooking:

2-3 tablespoons butter for frying

Instructions

  1. Remove the crusts from the bread slices. Use a rolling pin to flatten each slice.
  2. In a small bowl, mix together the melted butter, brown sugar, and 2 tablespoons of cinnamon.
  3. Spread the cinnamon mixture evenly on each flattened bread slice, leaving a small border around the edges.
  4. Roll each bread slice tightly into a log, pressing the edges gently to seal.
  5. In a shallow bowl, whisk together the eggs, milk, ½ teaspoon cinnamon, and vanilla extract.
  6. Heat a non-stick skillet over medium heat and add 2-3 tablespoons of butter.
  7. Dip each roll-up into the egg mixture, ensuring it’s coated evenly, then place it seam-side down in the skillet.
  8. Cook each roll for 2-3 minutes, rotating to ensure all sides are browned and crispy.

Notes

  • Add chocolate chips or chopped nuts to the cinnamon filling for extra flavor and texture.
  • For a fruity twist, add mashed bananas or berries into the roll-ups before rolling them up.
  • These roll-ups pair perfectly with maple syrup, powdered sugar, or whipped cream.
  • Swap white sandwich bread for whole wheat or brioche for a richer flavor.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days, or frozen for up to 1 month.
