A comforting and indulgent Crunchy Spinach Casserole with a golden, crispy bread topping and creamy spinach base. Perfect for family dinners, holiday meals, or anytime you're craving a savory, satisfying side dish.

Ingredients

  • 1/2 cup butter, divided
  • 2 celery ribs, finely chopped
  • 1 small onion, finely chopped
  • 2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
  • 1 can (10-3/4 ounces) condensed cream of mushroom soup, undiluted
  • 2 cups cubed bread (1/2 inch)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, melt 1/4 cup of butter over medium heat. Add chopped celery and onion. Cook, stirring, for 4-5 minutes until tender.
  3. Stir in the spinach and the undiluted cream of mushroom soup. Stir until well combined.
  4. Transfer the spinach mixture into a 1-1/2-quart round baking dish.
  5. In a small saucepan, melt the remaining butter over medium heat. Stir in the cubed bread and coat it evenly with butter.
  6. Sprinkle the buttered bread cubes over the spinach mixture in the baking dish.
  7. Bake for 35-40 minutes, or until the casserole is bubbly and the bread cubes are golden brown on top.

Notes

  • Cheese Option: Add shredded cheese (cheddar or mozzarella) to the spinach mixture before baking for a cheesy variation.
  • Meat Option: Crumbled cooked  sausage can be added for extra flavor.
  • Herb Variation: Fresh or dried herbs like thyme or rosemary will add aromatic flavors.
