Crockpot Lasagna offers all the rich, cheesy goodness of traditional lasagna with minimal effort by using a slow cooker. It's perfect for busy weeknights or casual weekend meals.

Ingredients

1 pound ground beef

Lasagna noodles (enough to create three layers)

1 jar (24 ounces) spaghetti sauce

1½ cups cottage cheese

1½ cups shredded mozzarella cheese

2 tablespoons grated Parmesan cheese

Instructions

  1. In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Mix the cooked beef with the spaghetti sauce.
  3. Spread a thin layer of the meat sauce on the bottom of a 4-quart slow cooker.
  4. Place a layer of uncooked lasagna noodles over the sauce, breaking them to fit.
  5. Spread a portion of cottage cheese over the noodles.
  6. Sprinkle a layer of mozzarella cheese.
  7. Repeat the layers (sauce, noodles, cottage cheese, mozzarella) until all ingredients are used, ending with a layer of sauce.
  8. Sprinkle the grated Parmesan cheese over the top.
  9. Cover and cook on low for about 4 hours, or until the noodles are tender and the cheese is melted.

Notes

  • Drain the beef thoroughly to prevent watery lasagna.
  • No-boil noodles can be used instead of regular noodles.
  • Substitute ricotta for cottage cheese for a creamier texture.
  • Spicy Italian sausage can add a kick.
  • Add vegetables like mushrooms or spinach for a vegetarian version.
