Ingredients

  • 1 pound flank steak
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 package fajita seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 10 oz can Rotel, drained
  • 1 green pepper, sliced
  • 1 red pepper, sliced
  • 1 yellow pepper, sliced
  • 1/2 cup water (optional)

Instructions

  1. Place the flank steak in the crockpot. Top with diced onion, minced garlic, fajita seasoning, salt, pepper, Rotel, and sliced peppers.
  2. Set the slow cooker to high for 4 hours or low for 8 hours.
  3. In the last hour of cooking, add the sliced bell peppers and stir them into the mixture.
  4. Once cooking time is complete, shred the steak and return it to the crockpot. Stir the shredded steak with the vegetables and juices.
  5. Serve the fajitas in warm tortillas, over rice, or as a salad topping.

Notes

  • Variations: Use chicken breast or thighs as a lighter alternative to steak. Add a diced jalapeño for extra heat if desired. You can also serve with your favorite toppings like cheese, sour cream, or guacamole.
