Ingredients

  • 3 lbs skinless chicken thighs
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion
  • 3 cloves garlic, minced
  • 15 oz tomato sauce
  • 1 cup low-sodium chicken broth
  • 1 tbsp Italian seasoning
  • Salt and pepper to taste
  • 8 oz spaghetti (regular, whole wheat, or gluten-free)
  • Fresh parsley, dill, or basil for garnish

Instructions

  1. Prepare the Base – In a slow cooker, combine diced carrots, celery, onion, minced garlic, tomato sauce, chicken broth, Italian seasoning, salt, and pepper. Stir well.
  2. Add Chicken – Place the chicken thighs in the mixture, ensuring they are submerged.
  3. Slow Cook – Cover and cook on low for 6 hours or high for 3 hours until the chicken is tender.
  4. Shred Chicken – Remove the chicken, shred it using two forks, and return it to the slow cooker.
  5. Cook Spaghetti – Break the spaghetti in half, add it to the slow cooker, stir to coat, and cook on high for 20-30 minutes, stirring occasionally, until al dente.
  6. Serve – Garnish with fresh herbs and serve hot.

Notes

  • For a cheesy version, stir in 1 cup of shredded mozzarella or cheddar before adding spaghetti.
  • To prevent mushy pasta, monitor the spaghetti closely during cooking.
  • For a spicy kick, add red pepper flakes or use spicy Italian seasoning.
  • Make it gluten-free by using gluten-free spaghetti.
