This Crispy Cheddar Chicken is a delicious, easy-to-make dinner recipe featuring tender chicken coated in a crispy, cheesy crust with a creamy, flavorful sauce. Ingredients

  • 2 lbs chicken tenders or 4 large chicken breasts
  • 2 sleeves Ritz crackers
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup whole milk
  • 3 cups cheddar cheese, grated
  • 1 teaspoon dried parsley

For the Sauce:

  • 1 10-ounce can cream of chicken soup
  • 2 tablespoons sour cream
  • 2 tablespoons butter

Instructions

  • Preheat the oven to 400°F.
  • If using chicken breasts, cut each into 3 large pieces.
  • Crush the Ritz crackers using a food processor or place them in a zip-top bag and crush with a rolling pin.
  • Set up 3 shallow pans: one with milk, one with grated cheddar cheese, and one with crushed crackers mixed with salt and pepper.
  • Dip each chicken piece into the milk, then coat with grated cheddar cheese, pressing to adhere.
  • Next, dip the cheesy chicken into the cracker crumbs, pressing them on to coat.
  • Spray a 9x13-inch baking pan with cooking spray and place the coated chicken in it.
  • Sprinkle the chicken with dried parsley.
  • Cover with tin foil and bake for 35 minutes.
  • After 35 minutes, remove the foil and continue baking for another 10-15 minutes until golden brown and crispy.
  • While the chicken bakes, prepare the sauce: In a saucepan, whisk together the cream of chicken soup, sour cream, and butter. Heat over medium-high until smooth and hot.
  • Once the chicken is ready, serve with the creamy sauce drizzled on top.

Notes

  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat in the oven at 350°F for 10-15 minutes, or microwave for 1-2 minutes (may lose crunch).
