A creamy and flavorful one-pan orzo pasta dish infused with garlic, Parmesan, and fresh spinach, perfect as a quick weeknight meal or side dish.

Ingredients

  • 2 tablespoons olive oil
  • 1 tablespoon (20 g) butter
  • 1 large shallot, finely chopped
  • 4 garlic cloves, finely chopped
  • ¼ teaspoon garlic powder
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper
  • 1 cup (200 g) dry orzo pasta
  • 2 cups (480 ml) chicken or vegetable broth
  • 1 cup (240 ml) milk
  • ¾ cup (75 g) freshly grated Parmesan cheese
  • 2 cups (60 g) chopped fresh spinach

Instructions

  1. In a large pan, heat the olive oil and butter over medium-high heat.
  2. Add the chopped shallot and sauté until softened, about 2 minutes.
  3. Stir in the chopped garlic and cook for an additional minute until fragrant.
  4. Add the garlic powder, sea salt, and black pepper, stirring to combine.
  5. Pour in the chicken or vegetable broth and milk, bringing the mixture to a simmer.
  6. Stir in the dry orzo pasta, ensuring it's well-coated with the liquid.
  7. Reduce the heat to low and cover the pan. Let it simmer for about 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.
  8. Remove the pan from heat and stir in the grated Parmesan cheese until melted and creamy.
  9. Fold in the chopped fresh spinach until wilted.
  10. Taste and adjust seasoning with additional salt and pepper if needed.
  11. Serve hot, garnished with extra Parmesan cheese if desired.
