Creamy Garlic Butter Chicken & Rotini in Parmesan Sauce is a comforting and indulgent dish featuring juicy golden-seared chicken breasts served over rotini pasta, all coated in a rich, buttery garlic sauce with Parmesan and mozzarella cheeses.

Ingredients

12 oz rotini pasta

2 boneless, skinless chicken breasts

3 tablespoons butter (divided)

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

Salt and black pepper, to taste

1 cup heavy cream

1/2 cup chicken broth

1 cup grated Parmesan cheese

1/2 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add the rotini and cook according to the package instructions until al dente. Drain and set aside.
  2. Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
  3. In a large skillet over medium heat, melt 2 tablespoons of butter. Add the chicken breasts and cook for 5–6 minutes on each side, until golden brown and the internal temperature reaches 165°F (74°C).
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing into strips.
  5. In the same skillet, melt the remaining 1 tablespoon of butter over medium heat. Add the minced garlic and sauté for 30–60 seconds until fragrant.
  6. Pour in the chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer.
  7. Stir in the grated Parmesan and shredded mozzarella cheeses. Continue stirring until the cheeses are fully melted and the sauce thickens.
  8. Add the cooked rotini to the skillet, tossing to coat the pasta in the creamy sauce.
  9. Return the sliced chicken to the skillet, mixing it into the pasta and sauce. Let everything heat together for 1–2 minutes.
  10. Garnish with chopped fresh parsley and serve immediately.
