Ingredients

  • 2 Persian cucumbers, thinly sliced
  • 1 small red onion, thinly sliced
  • 1 cup plain Greek yogurt
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 2 tablespoons fresh dill, chopped
  • Salt and black pepper to taste

Instructions

  • Make the Dressing: In a bowl, mix together Greek yogurt, garlic, dill, lemon juice, olive oil, salt, and black pepper. Set aside.
  • Prepare the Vegetables: Thinly slice the cucumbers and red onion and place them in a bowl. A mandolin slicer works well for even slices.
  • Toss Together: Pour the dressing over the cucumbers and onions, tossing to coat evenly. Taste and adjust the seasoning with more salt or pepper if necessary.
  • Serve: Serve immediately or refrigerate for a bit before serving.

Notes

  • Storage/Reheating: Store leftovers in an airtight container in the refrigerator for up to 2-3 days. The salad is best served chilled.
  • Variations:
    • Swap Greek yogurt for sour cream for a different texture.
    • Add crumbled feta for extra tang.
    • Stir in lemon zest for a citrusy boost.
    • Use garlic powder if fresh garlic isn't available.
