Ingredients

  • For the Beef Tips:

    • 2 lbs beef sirloin tips (or stew meat, cut into bite-sized pieces)
    • 1 tablespoon olive oil
    • 1 medium onion (chopped)
    • 2 cloves garlic (minced)
    • 8 oz mushrooms (sliced)
    • 1 cup beef broth
    • 1/2 cup red wine (optional, but adds depth of flavor)
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon dried thyme
    • Salt and pepper (to taste)
  • For the Creamy Sauce:

    • 1 can (10.5 oz) cream of mushroom soup (or homemade equivalent)
    • 1/2 cup heavy cream (or half-and-half for a lighter option)
    • 2 tablespoons cornstarch (mixed with 2 tablespoons water to create a slurry)
  • Optional Garnish:

    • Fresh parsley (chopped, for brightness)

Instructions

  • the beef with salt and pepper, and sear the beef in batches until browned on all sides (about 2–3 minutes per batch). Transfer to the crockpot.

  • Sauté the Vegetables: In the same skillet, sauté the onion and garlic until softened (about 3–4 minutes). Add mushrooms and cook until they release their moisture and brown (5–7 minutes). Transfer to the crockpot.

  • Build the Sauce: Deglaze the skillet with red wine (if using), scraping up any browned bits from the pan. Pour into the crockpot with beef broth, Worcestershire sauce, and thyme. Stir to combine.

  • Slow Cook: Cover and cook on low for 6–8 hours or high for 3–4 hours, until the beef is tender and the flavors meld together.

  • Add the Creamy Sauce: During the last 30 minutes, stir in the cream of mushroom soup and heavy cream. Mix the cornstarch slurry into the sauce to thicken it. Continue cooking until the sauce thickens.

  • Serve and Enjoy: Garnish with fresh parsley and serve over rice, mashed potatoes, egg noodles, or polenta.

Notes

  • Variations: Add extra vegetables like carrots, celery, or peas for extra nutrition.
  • Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheating: Reheat gently on the stovetop or in the microwave, adding a splash of broth or cream to restore the sauce's consistency.
  • Freezing: You can freeze the beef tips and sauce for up to 3 months. Thaw before reheating.
