Ingredients

10 oz farfalle bow-tie pasta

½ cup Parmesan cheese

1.5 lb chicken thighs or breasts (skinless, boneless)

1.5 teaspoons smoked paprika

1 teaspoon Italian seasoning

¼ teaspoon salt

Freshly ground black pepper to taste

2 tablespoons olive oil

1 tablespoon olive oil (for corn)

Salt and pepper to taste (for corn)

2 cups cooked corn kernels

Instructions

  • Cook the pasta according to package directions, drain, and set aside.

  • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken and cook until golden brown and cooked through (about 6-7 minutes per side). Remove and set aside.

  • In the same skillet, heat 1 tablespoon of olive oil. Add corn and season with salt and pepper. Cook for about 5 minutes, stirring occasionally, until tender and slightly caramelized.

  • Slice the cooked chicken into thin strips. Add the chicken, pasta, and Parmesan cheese to the skillet with the corn. Toss to combine and heat through.

  • Serve immediately
