10 oz farfalle bow-tie pasta
½ cup Parmesan cheese
1.5 lb chicken thighs or breasts (skinless, boneless)
1.5 teaspoons smoked paprika
1 teaspoon Italian seasoning
¼ teaspoon salt
Freshly ground black pepper to taste
2 tablespoons olive oil
1 tablespoon olive oil (for corn)
Salt and pepper to taste (for corn)
2 cups cooked corn kernels
Cook the pasta according to package directions, drain, and set aside.
Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the seasoned chicken and cook until golden brown and cooked through (about 6-7 minutes per side). Remove and set aside.
In the same skillet, heat 1 tablespoon of olive oil. Add corn and season with salt and pepper. Cook for about 5 minutes, stirring occasionally, until tender and slightly caramelized.
Slice the cooked chicken into thin strips. Add the chicken, pasta, and Parmesan cheese to the skillet with the corn. Toss to combine and heat through.
Serve immediately
Feel free to swap farfalle pasta with penne, fusilli, or rotini.
Use ground beef or beef strips for a heartier alternative.
For extra flavor, fresh basil, thyme, marjoram, or oregano make great herb additions.
Try different cheeses like mozzarella, feta, or Asiago for a unique twist.
