Ingredients

4 large yellow onions, peeled and sliced into ¼-inch rounds

1 cup heavy cream

2 teaspoons Dijon mustard

½ cup Asiago cheese, grated

Instructions

  1. Preheat your oven to 450°F (230°C). Lightly grease a baking dish with olive oil. Peel and slice the onions into ¼-inch rounds, keeping them uniform for even cooking.
  2. Arrange the onion slices in a single layer in the prepared baking dish. Drizzle with olive oil and sprinkle with chopped thyme, salt, and pepper. Roast in the preheated oven for about 20 minutes, or until the onions begin to soften and turn golden around the edges.
  3. While the onions are roasting, heat the heavy cream in a small saucepan over medium heat until it begins to simmer. Stir in the Dijon mustard and half of the grated Asiago cheese, allowing the cheese to melt into the sauce. Do not let the cream boil; keep it at a gentle simmer.
  4. Once the onions have roasted, remove them from the oven. Pour the creamy sauce evenly over the onions, ensuring each slice is covered. Sprinkle the remaining Asiago cheese on top.
  5. Cover the baking dish with foil and return it to the oven. Bake for an additional 20 minutes, then uncover and bake for another 5 minutes to allow the cheese to become golden and bubbly.
