Ingredients

6 cups chicken broth

2 ribs celery, halved

1 medium onion, halved

2 boneless, skinless chicken breasts (about 1 lb each)

Salt and pepper to taste

3 cups all-purpose flour

1 tablespoon baking powder

1 1/4 teaspoons salt, divided

1 cup + 2 tablespoons milk

2 tablespoons butter (optional, for richer broth)

Fresh herbs (such as parsley or thyme) for garnish

Instructions

  • Prepare the Broth: In a large stockpot, combine chicken broth, celery, and onion. Bring to a simmer over medium heat.

  • Add chicken breasts and cook for about 15 minutes until tender. Remove, let cool, then shred the chicken.

  • Prepare the Dumplings: In a large bowl, sift together flour, baking powder, and 1 teaspoon salt. Gradually add milk, mixing until a soft dough forms.

  • Roll out the dough to about ¼ inch thick on a floured surface, then cut into small squares (1-2 inches).

  • Return the broth to a simmer and add the dumplings. Stir gently to prevent sticking. Cover and simmer for 15 minutes, stirring occasionally until the dumplings are tender.

  • Add shredded chicken to the pot and mix. Taste the broth and adjust with salt and pepper. Optionally, add butter for richness.

  • Garnish with fresh herbs and serve.

Notes

  • Variations: Add herbs, extra veggies like carrots and peas, or even a spicy kick with cayenne or red pepper flakes. For a creamy version, add heavy cream or extra milk.

  • Storage: Refrigerate leftovers for up to 3 days. Freezable for up to 2 months but may alter dumpling texture.

  • Reheating: Reheat on the stovetop, adding broth or water if needed to thin the soup.
