Country Apple Fritter Bread is a moist and tender quick bread filled with chopped apples, cinnamon sugar, and topped with a sweet glaze. Perfect for breakfast, dessert, or a cozy snack.

Ingredients

1/3 cup light brown sugar

1 teaspoon ground cinnamon

2/3 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 1/2 teaspoons vanilla extract

1 1/2 cups all-purpose flour

1 3/4 teaspoons baking powder

1/2 cup milk or almond milk

2 apples, peeled and chopped

2 tablespoons granulated sugar (for apples)

1 teaspoon ground cinnamon (for apples)

1/2 cup powdered sugar

1 to 3 tablespoons milk or cream (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper.
  2. Mix 1/3 cup brown sugar with 1 teaspoon cinnamon in a small bowl; set aside.
  3. Toss chopped apples with 2 tablespoons sugar and 1 teaspoon cinnamon in another bowl; set aside.
  4. Cream 2/3 cup sugar and softened butter in a medium bowl until smooth.
  5. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  6. Whisk together flour and baking powder in a separate bowl.
  7. Gradually add flour mixture to creamed mixture, alternating with milk, beginning and ending with flour. Mix until just combined.
  8. Pour half of the batter into the loaf pan. Layer half the apple mixture over it, then sprinkle half the brown sugar-cinnamon mix.
  9. Repeat with remaining batter, apples, and brown sugar mix.
  10. Press apples lightly into batter and swirl brown sugar mix using a knife.
  11. Bake for 60-70 minutes or until a toothpick inserted in center comes out clean.
  12. Cool in the pan for 15 minutes, then transfer to a wire rack to cool completely.
  13. Mix powdered sugar with 1 to 3 tablespoons of milk or cream for glaze. Drizzle over cooled bread.

  • Use Granny Smith apples for a tart contrast.
  • Can substitute butter with vegetable oil.
  • Make ahead and store at room temperature or refrigerate.
  • Mini loaf pans or muffin tins can be used with adjusted bake times.
  • Freeze for up to 3 months.
