Ingredients

For the Meatloaf:

2 pounds ground beef

1 small onion, finely diced (about 1 cup)

4 garlic cloves, minced

2 large eggs

2 tablespoons ketchup

1 tablespoon Worcestershire sauce

⅔ cup quick-cooking oats

⅓ cup milk

2 tablespoons finely chopped fresh parsley

1 teaspoon Italian seasoning

1 teaspoon kosher salt

½ teaspoon ground black pepper

For the Glaze:

½ cup ketchup

1 tablespoon Worcestershire sauce

1 tablespoon coconut sugar or brown sugar

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C).

  2. Prepare Meat Mixture: In a large bowl, combine ground beef, diced onion, minced garlic, eggs, ketchup, Worcestershire sauce, oats, milk, parsley, Italian seasoning, salt, and pepper. Mix gently with your hands until just combined.

  3. Form the Loaf: Transfer the mixture to a rimmed baking sheet or casserole dish. Shape it into a loaf approximately 9x5 inches in size.

  4. Apply Glaze: In a small bowl, mix together the ketchup, Worcestershire sauce, and sugar. Brush this glaze evenly over the top and sides of the meatloaf.

  5. Bake: Place the meatloaf in the oven and bake for 50 to 60 minutes, or until the internal temperature reaches 160°F (70°C).

  6. Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Slice and serve with your favorite sides.
