Ingredients

  • 2 lbs ground beef (85% or 80% lean)
  • 1 medium onion, finely chopped
  • 3 tbsp fresh parsley, finely chopped
  • ½ tsp onion powder
  • 2 tbsp ketchup
  • 1 tsp Italian seasoning
  • ¾ cup ketchup
  • 1 tsp olive oil
  • 2 tbsp brown sugar
  • ¾ cup Panko breadcrumbs (or gluten-free breadcrumbs)
  • ⅓ cup milk
  • 2 large eggs
  • 3 garlic cloves, minced
  • 1 tsp salt
  • ½ tsp ground black pepper
  • 1 ½ tsp white vinegar
  • ½ tsp garlic powder

Instructions

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine ground beef, chopped onion, parsley, garlic, breadcrumbs, eggs, milk, salt, pepper, and onion powder. Mix gently until just combined.
  • Shape the mixture into a loaf and place it on a baking sheet lined with parchment paper or in a loaf pan.
  • In a small bowl, whisk together ¾ cup ketchup, brown sugar, white vinegar, and Italian seasoning for the glaze.
  • Brush the glaze generously over the meatloaf.
  • Bake for 1 hour, or until the internal temperature reaches 160°F (71°C).
  • Remove from the oven and let it rest for 10-15 minutes before slicing.

  • If you prefer a cheesier meatloaf, add shredded mozzarella or cheddar cheese into the meat mixture.
