Ingredients

For the Muffins:

1/2 cup white sugar

1/4 cup butter, melted

1/2 cup milk

1/2 tsp vanilla extract

1 cup all-purpose flour

1 tsp baking powder

3/4 tsp ground nutmeg

For the Topping:

1/4 cup butter, melted

1/2 cup white sugar

1/2 tsp cinnamon

Instructions

  • Preheat your oven to 375°F (190°C). Grease a mini muffin pan with non-stick spray.

  • In a mixing bowl, cream together the sugar and melted butter. Stir in the milk and vanilla extract until well combined.

  • Mix in the flour, baking powder, and nutmeg. Stir until just combined.

  • Spoon the batter into the muffin pan, filling each cup halfway.

  • Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean.

  • While the muffins are baking, prepare the topping. In a small bowl, melt the remaining butter. In another bowl, combine the sugar and cinnamon.

  • Once the muffins are done baking, dip each one in the melted butter and roll it in the cinnamon-sugar mixture. Let them cool before serving.

Notes

  • For regular-sized muffins, use a standard muffin pan and bake for 15-18 minutes.

  • For a gluten-free version, substitute the all-purpose flour with a gluten-free flour blend.

  • You can add chocolate chips, chopped nuts, or a drizzle of honey on top for extra flavor.

  • To store, keep in an airtight container at room temperature for up to 3 days. These muffins also freeze well for up to 3 months.
