Ingredients

  • 2 cups cream cheese, softened
  • ½ cup sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • ½ cup melted dark chocolate
  • ½ cup strawberry purée
  • 1 chocolate cookie crust

Instructions

  • Preheat the oven to 325°F (160°C).
  • In a mixing bowl, beat softened cream cheese, sugar, and vanilla extract until smooth and creamy.
  • Add the eggs, one at a time, mixing well after each addition.
  • Split the batter into two bowls. Stir melted dark chocolate into one bowl and strawberry purée into the other.
  • Spoon alternating spoonfuls of chocolate and strawberry mixtures into the prepared chocolate cookie crust. Use a knife or skewer to gently swirl the mixtures together.
  • Bake for 40 minutes or until the cheesecake is set but still slightly jiggly in the center.
  • Cool completely and refrigerate for at least 4 hours (overnight for best results) before slicing and serving.

Notes

  • For a different twist, try substituting the strawberry purée with other fruit purées like raspberry or mango.
  • Store leftover cheesecake in an airtight container in the refrigerator for up to 5 days.
  • For serving, let the cheesecake sit at room temperature for about 15-20 minutes for the best texture.
