Ingredients

For the Brownie Cake:

  • 1 cup (225g) unsalted butter
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup (120g) all-purpose flour
  • 1 cup (85g) unsweetened cocoa powder
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup (175g) semi-sweet or dark chocolate chips

For the Ganache Topping:

  • 1 cup (240ml) heavy cream
  • 8 oz (225g) semi-sweet chocolate, chopped

Instructions

  • Preheat and Prep: Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking pan and line it with parchment paper.
  • Melt and Mix: Melt the butter in a saucepan over medium heat, stir in the sugar until smooth. Remove from heat and beat in the eggs one at a time, followed by the vanilla extract.
  • Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
  • Make the Batter: Fold the dry ingredients into the wet mixture. Stir in the chocolate chips.
  • Bake: Pour the batter into the prepared pan and bake for 25–30 minutes, or until a toothpick comes out with a few moist crumbs. Let cool completely.
  • Prepare the Ganache: Heat the heavy cream over medium heat until it simmers (don’t boil). Pour it over the chopped chocolate and whisk until smooth.
  • Assemble the Cake: Pour the ganache over the cooled cake, spreading it evenly. Let it set at room temperature for about an hour or in the fridge for 30 minutes.
  • Serve and Enjoy: Slice the cake and serve. Pair with ice cream or whipped cream for an extra indulgence!
