Ingredients

1 lb ground beef

1 tablespoon avocado oil (or preferred cooking oil)

1 onion, chopped

4 garlic cloves, minced

1-inch piece of ginger, grated

1 head of cabbage, thinly sliced (about 8 cups)

1/2 cup shredded carrots

Salt and pepper, to taste

Green onions and sesame seeds for garnish (optional)

Stir Fry Sauce:

1/2 cup coconut aminos (or soy sauce)

1 tablespoon rice vinegar

2 teaspoons sesame oil

1/2 teaspoon crushed red pepper flakes (optional)

Instructions

  1. In a small bowl, whisk together the coconut aminos, rice vinegar, sesame oil, and crushed red pepper flakes. Set aside.
  2. Heat the avocado oil in a large skillet over medium-high heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and grated ginger to the skillet, cooking for an additional minute until fragrant.
  4. Add the ground beef to the skillet, breaking it apart with a wooden spoon. Cook until browned and fully cooked through, about 5-7 minutes.
  5. Stir in the sliced cabbage and shredded carrots. Pour the prepared stir fry sauce over the mixture. Cook, stirring occasionally, until the cabbage is wilted and tender, about 5 minutes.
  6. Season with salt and pepper to taste.
  7. Garnish with sliced green onions and sesame seeds, if desired. Serve warm.
