Ingredients

For the Beef & Marinade:

1 lb flank steak, thinly sliced against the grain

1 tbsp soy sauce

1 tbsp Shaoxing wine or dry sherry

1 tsp cornstarch

For the Sauce:

3 tbsp oyster sauce

2 tbsp soy sauce

1 tbsp brown sugar

1 tsp cornstarch

1/2 cup beef broth

1 tbsp sesame oil

Freshly ground black pepper, to taste

For the Stir-Fry:

1 lb broccoli florets

2 tbsp vegetable oil, divided

3 cloves garlic, minced

1 tsp fresh ginger, grated

Instructions

  • Marinate the Beef: In a bowl, combine sliced flank steak with soy sauce, Shaoxing wine, and cornstarch. Mix and marinate for 20 minutes.

  • Make the Sauce: In another bowl, whisk together all sauce ingredients until smooth. Set aside.

  • Cook the Broccoli: Heat 1 tbsp oil in a skillet over medium-high. Stir-fry broccoli for 2-3 minutes until tender-crisp. Remove and set aside.

  • Stir-Fry the Beef: Add remaining oil to skillet. Sear beef in a single layer for 1-2 minutes, then stir and cook for 2-3 more minutes until nearly cooked through.

  • Add Aromatics: Push beef aside. Sauté garlic and ginger in the open space for 30 seconds until fragrant.

  • Combine: Add broccoli back to skillet. Re-whisk and pour in the sauce. Toss everything together until coated and sauce thickens (2-3 minutes).

  • Serve: Remove from heat and serve hot over steamed rice or noodles.

Notes

  • Add extra veggies like carrots, bell peppers, or snap peas.

  • For spice, add chili garlic sauce or red pepper flakes to the sauce.

  • For extra tender beef, add 1/4 tsp baking soda to the marinade.

  • Use tamari and gluten-free oyster sauce for a gluten-free version.
