Ingredients

Roasted Tomatoes:

Chicken Pasta:

  • 1.5 lb chicken breast (2 skinless, boneless chicken breasts)
  • ¼ teaspoon salt
  • 2 teaspoons smoked paprika
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • ½ lemon (preferably Meyer lemon), thinly sliced
  • 4 cloves garlic
  • 4 tablespoons butter
  • 8 oz spaghetti
  • 8 oz burrata cheese

Garnish:

  • ½ cup fresh basil, chopped
  • ⅓ cup pine nuts, lightly toasted

Instructions

  1. Preheat oven to 400°F. Toss the cherry tomatoes, garlic, olive oil, salt, and pepper together. Spread the mixture on a baking sheet and roast for 20 minutes.

  2. Season the chicken breasts with salt, smoked paprika, and Italian seasoning. Heat 2 tablespoons of olive oil in a skillet over medium heat. Cook the chicken for about 5 minutes on each side, until golden brown and cooked through. Slice the chicken thinly.

  3. Make the lemon butter sauce: In the same skillet, melt butter with thinly sliced lemon and garlic over medium heat. Sauté for 2 minutes. Remove from heat.

  4. Cook the spaghetti according to the package instructions. Add the cooked pasta to the skillet with the lemon butter sauce. Toss to combine. Remove the lemon slices before serving.

  5. Assemble the dish: In a large serving bowl, combine the pasta, sliced chicken, and roasted tomatoes. Top with burrata cheese, fresh basil, and toasted pine nuts.
