Chicken Salad with Grapes and Pecans is a delightful dish combining the creaminess of chicken salad with the sweetness of grapes and the crunch of pecans, perfect for lunch, picnics, or as a side dish.

Ingredients

2 cups cooked chicken, shredded or cubed

1 cup red grapes, halved

1/2 cup toasted pecans, chopped

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey

1 tablespoon lemon juice

Salt and pepper to taste

Instructions

  1. In a large bowl, combine the shredded or cubed chicken, halved grapes, and toasted pecans.
  2. In a small bowl, whisk together the mayonnaise, Dijon mustard, honey, and lemon juice until smooth.
  3. Pour the dressing over the chicken mixture and gently toss to coat all the ingredients evenly.
  4. Season with salt and pepper to taste.
  5. Chill the chicken salad in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Notes

  • You can add other fruits like apples or dried cranberries for a different twist.
  • If you don’t have pecans, walnuts or almonds work well as substitutes.
  • Use Greek yogurt instead of mayonnaise for a lighter version or add curry powder for a unique flavor.
  • This salad is best served chilled, but if you prefer it warm, you can heat the chicken separately and then combine it with the other ingredients.
