Chicken Cobbler is a comforting one-pan casserole featuring tender rotisserie chicken, creamy soup, vegetables, and a buttery Cheddar Bay biscuit topping, perfect for an easy and satisfying meal.

Ingredients

4 tablespoons salted butter, melted

4 cups cooked chicken, cut into bite-sized pieces (rotisserie chicken works well)

1 (12 oz) bag frozen peas and carrots

3 teaspoons garlic powder

3 teaspoons onion powder

½ teaspoon black pepper

1 can (10.5 oz) cream of chicken soup

2 cups chicken broth (low sodium recommended)

1 box (11.36 oz) Cheddar Bay Biscuit Mix

2 cups whole milk

½ cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Grease a 9×13-inch baking dish with the melted butter.
  3. Spread the chicken evenly over the bottom of the dish.
  4. Distribute the frozen peas and carrots on top of the chicken.
  5. Sprinkle the garlic powder, onion powder, and black pepper over the vegetables. Do not stir; just layer the ingredients.
  6. In a bowl, whisk together the cream of chicken soup and chicken broth until smooth.
  7. Pour this mixture over the chicken and vegetables in the baking dish, ensuring it covers the entire surface without stirring.
  8. In another bowl, combine the Cheddar Bay Biscuit Mix (reserve the seasoning packet for later), whole milk, and shredded cheddar cheese.
  9. Pour the biscuit batter evenly over the top of the chicken and vegetable layers. Do not stir; just spread the batter gently over the surface.
  10. Bake for 55-65 minutes, until the biscuit topping is golden brown and cooked through. The center may appear slightly runny, but it will thicken as it cools.
  11. While baking, melt 2 tablespoons of butter and stir in the seasoning packet from the Cheddar Bay Biscuit Mix.
  12. Brush the seasoned butter over the baked cobbler before serving.
