Ingredients

2 boneless, skinless chicken breasts

1 tablespoon olive oil

8 oz sliced mushrooms (button, cremini, or a mix)

2 cloves garlic, minced

1/2 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Asiago cheese

1 tablespoon Dijon mustard

Salt and pepper, to taste

1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper on both sides. Add the chicken to the skillet and cook for 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set it aside.
  2. In the same skillet, add the sliced mushrooms and cook for 3-4 minutes until softened and slightly browned. Add the minced garlic and cook for another minute until fragrant.
  3. Stir in the chicken broth and Dijon mustard. Let the mixture simmer for 2-3 minutes to reduce slightly.
  4. Add the heavy cream and grated Asiago cheese, stirring to combine. Let the sauce simmer for another 2-3 minutes until the cheese has melted and the sauce thickens.
  5. Return the chicken to the skillet, spooning the sauce over the top. Cook for an additional 2-3 minutes to heat through and allow the flavors to meld.
  6. Garnish with freshly chopped parsley and serve hot.
