Ingredients

2 pounds of chicken tenderloins

½ teaspoon kosher salt

½ teaspoon black pepper

10.5 ounce can cream of celery soup

10.5 ounce can cream of chicken soup

¼ cup milk

6-ounce box Stove Top chicken stuffing mix

1 ½ cups chicken broth

Fresh or dried parsley for garnish (optional)

Instructions

  1. Preheat the oven to 375°F. Spray an 11×7-inch baking dish with cooking spray and set aside.
  2. Cut 2 pounds of chicken tenderloins into bite-sized pieces and place them into the prepared baking dish.
  3. Toss the chicken pieces with ½ teaspoon kosher salt and ½ teaspoon black pepper to season evenly.
  4. In a small bowl, whisk together the cream of celery soup, cream of chicken soup, and milk until smooth.
  5. Pour the soup mixture over the chicken, ensuring all the chicken is covered.
  6. Evenly sprinkle the Stove Top chicken stuffing mix on top of the chicken and soup mixture.
  7. Pour 1 ½ cups of chicken broth over the stuffing, making sure that all the stuffing is moistened by the broth.
  8. Cover the casserole with foil and bake for 40 minutes. Remove the foil and bake for an additional 5 minutes to lightly brown the top.
  9. Once done, remove from the oven and let it sit for a few minutes. Garnish with parsley if desired and serve hot.

Notes

  • Add Vegetables: Include frozen mixed vegetables, such as peas and carrots, to add extra flavor and nutrition to the casserole. Just mix them in with the chicken before adding the soup mixture.
  • Use Different Stuffing Mix: If you prefer a different flavor, you can substitute the Stove Top chicken stuffing mix with a savory cornbread stuffing or other stuffing varieties.
  • Cheese Option: For a cheesy twist, sprinkle shredded cheddar cheese over the top before baking. It will melt into the stuffing and create a rich, cheesy layer.
  • Spices: Enhance the flavor with extra seasonings such as garlic powder, onion powder, or dried thyme.
  • Storage: Store leftover casserole in an airtight container in the refrigerator for up to 3-4 days.
  • Reheating: Reheat individual portions in the microwave for 1-2 minutes, or bake in the oven at 350°F for 15-20 minutes until heated through.
