Ingredients

  • 1 box Rice a Roni Spanish rice
  • 1 lb lean ground beef
  • 1 small onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1 can Rotel (diced tomatoes with green chilies)
  • 1-2 cups shredded sharp cheddar cheese (divided)
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  • Prepare the Rice a Roni Spanish rice according to package instructions and set aside.
  • In a large skillet, brown the ground beef over medium heat, breaking it apart as it cooks.
  • Add chopped onions and bell peppers to the skillet. Cook until vegetables soften, about 5 minutes.
  • Stir in cumin, salt, and pepper. Add Rotel (undrained) and mix well.
  • Combine the prepared Rice a Roni with the beef and vegetable mixture.
  • Transfer the mixture into a greased baking dish.
  • Sprinkle the top with shredded sharp cheddar cheese.
  • Bake in a preheated 350°F oven for 25-30 minutes, until the cheese is melted and bubbly.
  • Let cool slightly before serving.
