Ingredients

  • 1 lb ground beef

  • 1/2 cup breadcrumbs

  • 1 large egg

  • 1/4 cup milk

  • 1/4 cup finely chopped onion

  • 1 tsp garlic powder

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1 tbsp Worcestershire sauce

  • 1/2 cup ketchup, divided

  • 2 cups mashed potatoes

  • 1 cup shredded cheddar cheese

  • Green onions or chives for garnish

Instructions

  • Preheat the oven to 375°F (190°C).

  • In a large bowl, combine the ground beef, breadcrumbs, egg, milk, onion, garlic powder, salt, pepper, Worcestershire sauce, and 1/4 cup ketchup. Mix well.

  • Press the mixture into a greased 9x9-inch baking dish. Spread the remaining 1/4 cup ketchup on top.

  • Bake for 20-25 minutes, or until the meatloaf is fully cooked.

  • Spread mashed potatoes over the meatloaf and top with shredded cheddar cheese.

  • Return to the oven and bake for another 10-15 minutes, or until the cheese is melted and bubbly.

  • Optionally, broil for 1-2 minutes for a golden top.

  • Garnish with green onions or chives before serving.

Notes

  • For a low-carb version, substitute mashed potatoes with cauliflower mash.

  • To make it gluten-free, use gluten-free breadcrumbs.

  • You can use ground turkey or chicken instead of beef for a lighter option.

  • Feel free to customize the topping with different cheeses or vegetables.
