Cheesy Garlic Butter Mushroom Stuffed Chicken is a delicious and savory dish that combines tender chicken breasts with a flavorful garlic butter mushroom stuffing and melted mozzarella and Parmesan cheeses. Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 8 oz mushrooms, sliced
  • 4 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Preheat your oven to 400°F (200°C).
  • Carefully cut a pocket into each chicken breast, making sure not to cut all the way through.
  • Season the chicken breasts with salt and pepper, both inside and out.
  • Heat olive oil and melt butter in a skillet over medium heat. Add the sliced mushrooms and cook for 5-7 minutes until golden brown.
  • Add minced garlic to the skillet and cook for an additional 1-2 minutes.
  • In a separate bowl, combine the shredded mozzarella and grated Parmesan cheeses.
  • Stuff the chicken pockets with the mushroom mixture followed by the cheese mixture.
  • Place the stuffed chicken breasts in a greased baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  • Let the chicken rest for 5 minutes before garnishing with chopped fresh parsley.
