4 boneless, skinless chicken breasts
Salt and pepper to taste
1 tbsp olive oil
2 tbsp butter
8 oz mushrooms, sliced
4 cloves garlic, minced
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 tbsp fresh parsley, chopped, for garnish
Preheat the oven to 400°F (200°C).
Using a sharp knife, carefully cut a pocket into each chicken breast.
