Ingredients

4 boneless, skinless chicken breasts

Salt and pepper to taste

1 tbsp olive oil

2 tbsp butter

8 oz mushrooms, sliced

4 cloves garlic, minced

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 tbsp fresh parsley, chopped, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Using a sharp knife, carefully cut a pocket into each chicken breast.

  3. Season the chicken with salt and pepper, both inside and out.

  4. In a skillet, heat olive oil and butter over medium-high heat. Add the sliced mushrooms and cook for 5-7 minutes until golden, stirring occasionally. Add garlic and cook for another 1-2 minutes.

  5. Remove from heat and allow the mushroom mixture to cool.

  6. In a separate bowl, combine mozzarella and Parmesan cheeses.

  7. Stuff the chicken pockets with the mushroom mixture and cheese.

  8. Place the stuffed chicken in a greased baking dish and bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly.

  9. Let the chicken rest for 5 minutes, then garnish with fresh parsley and serve.
