Ingredients

2 cups fresh corn kernels (or frozen, thawed)

1 cup shredded sharp cheddar or mozzarella cheese

1 cup all-purpose flour

1 teaspoon baking powder

2 large eggs

1/4 cup finely chopped green onions

Instructions

  1. Gather all ingredients and cut fresh corn from the cob if needed.
  2. In a large bowl, combine the flour and baking powder.
  3. In another bowl, whisk the eggs, then stir in the corn, cheese, and green onions.
  4. Pour the egg mixture into the dry ingredients and gently stir to combine. Be careful not to overmix.
  5. Heat oil in a skillet over medium heat.
  6. Drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan.
  7. Fry the fritters until golden brown on both sides, about 3 minutes per side.
  8. Remove from the skillet and drain on paper towels.
  9. Serve warm with your favorite dipping sauce.

Notes

  • For a spicy version, add a teaspoon of chili powder, paprika, or cayenne pepper to the batter.
  • To bake, place the fritters on a baking sheet and bake at 375°F for 20 minutes, flipping halfway through.
  • Experiment with different cheese types like pepper jack or gouda for a unique twist.
  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • For reheating, use a skillet or oven to restore the fritters' crispy texture.
