Cheesy Chicken Fritters are savory patties made with diced chicken, mozzarella, dill, and spices, pan-fried to golden perfection and served with a zesty garlic dip.

Ingredients

lbs chicken breasts, diced into -inch pieces

2 large eggs

⅓ cup mayonnaise

⅓ cup all-purpose flour (or cornstarch/potato starch for gluten-free)

4 oz mozzarella cheese, finely shredded (about 1⅓ cups)

1½ tablespoons fresh dill, finely chopped

½ teaspoon sea salt

⅛ teaspoon freshly ground black pepper

2 tablespoons light olive oil (or any high-heat cooking oil)

⅓ cup mayonnaise (for dip)

1 garlic clove, finely minced

½ tablespoon fresh lemon juice

¼ teaspoon sea salt (for dip)

⅛ teaspoon freshly ground black pepper (for dip)

Instructions

  1. In a large bowl, combine diced chicken, eggs, mayonnaise, flour, shredded mozzarella, chopped dill, salt, and pepper. Mix thoroughly.
  2. Cover the bowl and refrigerate the mixture for at least 2 hours or overnight.
  3. Heat a non-stick skillet over medium heat and add olive oil.
  4. Scoop heaping tablespoons of the chicken mixture into the skillet, flatten slightly, and cook for 3–4 minutes per side until golden and cooked through.
  5. In a small bowl, whisk together mayonnaise, minced garlic, lemon juice, salt, and pepper for the dip.
  6. Serve the hot fritters with the garlic dip.

Notes

  • Chilling the mixture improves flavor and handling.
  • Substitute herbs and cheese for different flavors.
  • Fritters can be baked at 400°F for 20–25 minutes if preferred.
