Ingredients

1 medium head of cabbage, chopped

1 pound ground beef

1 onion, chopped

2 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, undrained

1 cup cooked rice (white or brown rice)

1 teaspoon Italian seasoning

Salt and pepper, to taste

2 cups shredded cheddar cheese

1 cup beef broth

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish with butter or nonstick spray.
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are soft, about 6-8 minutes. Drain any excess fat.
  3. Add the chopped cabbage to the skillet and cook for 5 minutes, stirring occasionally, until the cabbage begins to wilt.
  4. Stir in the diced tomatoes (with juices), cooked rice, Italian seasoning, salt, and pepper. Simmer for an additional 5 minutes.
  5. Transfer the mixture into the prepared baking dish and pour beef broth over the top.
  6. Sprinkle shredded cheddar cheese evenly over the casserole.
  7. Cover the dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for another 10-15 minutes, or until the cheese is golden and bubbly. Let rest for 5 minutes before serving.
