Ingredients

1/2 cup (1 stick) unsalted butter, melted

8 oz semi-sweet chocolate, chopped

3/4 cup granulated sugar

1/4 cup brown sugar, packed

3 large eggs

1 tsp vanilla extract

1/2 cup all-purpose flour

1/4 tsp salt

1/2 cup sour cream

8 oz cream cheese, softened

1/4 cup granulated sugar (for cheesecake layer)

1 large egg (for cheesecake layer)

1 tsp vanilla extract (for cheesecake layer)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9x9-inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt the butter and chopped chocolate together in the microwave, stirring every 30 seconds until smooth.
  3. Once melted, stir in both sugars until fully combined. Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
  4. Add the flour and salt to the chocolate mixture, and stir until just combined.
  5. Pour the brownie batter into the prepared baking pan and smooth it out evenly.
  6. For the cheesecake layer, beat together the softened cream cheese and sugar until smooth. Add the egg and vanilla extract, and mix until fully incorporated.
  7. Drop spoonfuls of the cheesecake mixture onto the brownie batter and gently swirl them together using a knife or toothpick to create a marbled effect.
  8. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with just a few crumbs attached.
  9. Let the brownies cool in the pan for at least 30 minutes before transferring them to the refrigerator to chill for at least 2 hours before cutting into squares.

Notes

  • Add-ins: Add some chocolate chips, nuts (like walnuts or pecans), or even a swirl of caramel for extra flavor.
  • Flavored Cheesecake Layer: Add lemon zest or vanilla bean paste to the cheesecake layer for a unique twist.
  • Gluten-Free Version: Use a gluten-free flour blend to make the brownies gluten-free.
  • Storage: Store Cheesecake Brownies in an airtight container in the refrigerator for up to 4-5 days.
  • Freezing: You can freeze the brownies for up to 2 months. Wrap them tightly in plastic wrap and place them in a freezer-safe container.
  • Reheating: For the best texture, enjoy them chilled or at room temperature. If you prefer them warm, you can microwave individual squares for about 10-15 seconds.
