These Cheeseburgers in Foil with Veggies and Potatoes are the ultimate weeknight dinner! A juicy hamburger patty, seasoned potatoes, and savory onions are all wrapped in foil for easy cooking and cleanup. Whether served as a traditional burger or on a bun with your favorite condiments, this recipe guarantees a flavorful meal for the whole family in just 45 minutes.

Ingredients

  • 4 quarter-pound hamburger patties (85/15 beef or your preferred choice)
  • 1 red onion, sliced into thick rings (do not separate the rings)
  • 4 to 5 medium Yukon Gold potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 4 slices cheddar cheese
  • 1 teaspoon garlic powder
  • Salt and freshly cracked pepper to taste
  • Hamburger buns (optional)
  • 4 sheets of 12-inch heavy-duty aluminum foil

Instructions

  • Prep the Potatoes: Peel and dice the potatoes into half-inch chunks. Toss them in a bowl with olive oil and set aside.
  • Arrange on Foil: Lay out the aluminum foil sheets. Evenly distribute the potatoes onto each sheet. Top each with a slice of onion and a hamburger patty. Season with salt, pepper, and garlic powder.
  • Fold and Bake: Fold the foil into pouches, sealing the ingredients inside. Place them on a baking sheet and bake in a preheated 400°F oven for about 35 minutes, or until the internal temperature of the burgers reaches 165°F.
  • Melt the Cheese: Carefully open the foil pouches. Place a slice of cheddar cheese on top of each burger and bake for an additional 2 minutes until the cheese melts.
  • Serve: Serve as-is, or place the burger patties on buns with your favorite toppings like ketchup, mustard, or pickles. Enjoy!

Notes

  • Variations:
    • Spicy: Use Pepper Jack cheese and add diced red bell peppers for a spicy twist. Serve with sour cream or guacamole.
    • Veggie: Add extra vegetables like mushrooms, green beans, or corn to the foil packets for added nutrition.
    • Sausage: Substitute hamburger patties with kielbasa and swap out the hamburger buns for hot dog buns.
  • Storage/Reheating: Leftovers can be stored in airtight containers in the fridge for up to 3 days. Reheat in the oven or microwave until warmed through. You can also reheat the foil packets in the oven at 350°F for 10-15 minutes for best results.
