Perfect for any occasion, this recipe combines savory Italian sausage with the rich flavor of Chardonnay and a spicy, tangy mustard dip. Easy to make, flavorful, and a crowd favorite, these sausage bites are a must-try snack that everyone will love.

Ingredients

  • For the Spicy Mustard Dip:

    • 3/4 cup mayonnaise
    • 6 tablespoons prepared yellow mustard
    • 2 teaspoons sriracha (adjust to taste)
    • 2 cloves garlic, finely grated
    • 1 teaspoon paprika
    • 1/2 teaspoon kosher salt
    • 1/2 teaspoon freshly ground black pepper
  • For the Sausages:

    • 5 pounds Italian sausage (mild, sweet, or hot)
    • 1 bottle Chardonnay (or substitute with apple cider or broth)

Instructions

  • Make the Spicy Mustard Dip: In a medium bowl, mix together mayonnaise, yellow mustard, sriracha, garlic, paprika, kosher salt, and black pepper. Stir until smooth and fully combined. Cover and refrigerate until ready to serve.
  • Cook the Sausages: Slice the Italian sausage links into bite-sized pieces (each link should yield about 4 pieces). In a large stockpot, add sausage slices and pour in the Chardonnay. Bring the mixture to a boil over high heat, then reduce heat and simmer for 40 minutes.
  • Broil the Sausages: Preheat the broiler to high. Line a metal baking sheet with aluminum foil. Once sausages are done simmering, transfer them to the baking sheet. Broil the sausages 4 inches below the heating element for 2-3 minutes, until golden brown. Flip and broil the other side for another 2-3 minutes.
  • Serve: Place sausage bites on a platter and serve with the spicy mustard dip on the side.

Notes

  • For a spicier kick, use hot Italian sausages.
  • Swap Chardonnay with a dry white wine like Sauvignon Blanc or Pinot Grigio for similar flavor.
  • Can be prepared in advance. Reheat sausage bites in a 350°F oven for 10 minutes, or enjoy the dip at room temperature or cold.
