Carnivore Chicken Kabobs are a high-protein, keto-friendly meal perfect for a simple and satisfying dinner. Made with tender boneless chicken breasts marinated in butter, rosemary, and optional garlic, these oven-baked kabobs turn out juicy and flavorful every time. Ideal for meal prep or a quick protein-packed dish, they’re easy to make and customizable to suit your taste.

Ingredients

  • pounds boneless chicken breasts, cut into 1-inch chunks
  • 3 tablespoons butter, melted
  • 3 cloves garlic, minced (omit for strict carnivore diet)
  • 1 tablespoon minced fresh rosemary
  • 1 teaspoon salt
  • Black pepper, to taste
  • Butter or beef tallow, for brushing the pan

Instructions

  • Preheat Oven: Set your oven to 425°F (220°C) and place a cast iron grill pan inside to heat.
  • Prepare Marinade: In a large bowl, mix melted butter, minced garlic, rosemary, salt, and black pepper. Add chicken chunks and coat evenly.
  • Assemble Kabobs: Thread marinated chicken onto 6 skewers, spacing them slightly apart.
  • Prepare Grill Pan: Carefully remove the preheated grill pan and brush it with butter or beef tallow.
  • Cook Kabobs: Arrange skewers in a single layer on the pan. Bake for about 15 minutes, flipping halfway through for even cooking.
  • Serve: Remove from the oven, let rest for a few minutes, and enjoy!

  • For deeper flavor, marinate the chicken for at least 30 minutes or up to 2 hours.
