Caesar Chicken Salad Lunch Wraps are a quick and easy lunch option packed with creamy Caesar dressing, shredded chicken, and fresh vegetables. Ingredients

  • 2 cups shredded chicken breasts (or rotisserie chicken)
  • 1/2 green bell pepper, diced
  • 1 shallot bulb, finely chopped
  • 1/2 cup Caesar salad dressing (store-bought or homemade)
  • 1/4 cup mayonnaise
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 4 burrito-sized tortillas
  • 2 cups leafy greens (romaine or any salad mix)
  • Optional add-ins: cherry tomatoes, croutons, extra Parmesan, olives, lemon wedges

Instructions

  • In a medium mixing bowl, combine the shredded chicken, diced green bell pepper, chopped shallot, Caesar dressing, mayonnaise, Parmesan cheese, garlic powder, salt, and pepper. Mix until well combined.
  • In a separate small bowl, toss the leafy greens with 1 cup of the chicken salad mixture to coat evenly.
  • Lay out the tortillas on a flat surface. Place the chicken and greens mixture in a horizontal line across the center of each tortilla.
  • Roll the tortillas tightly, folding in the sides as you go, to form wraps.
  • Serve immediately or wrap them up in parchment paper or plastic wrap for later use.
