Ingredients

  • 2 kg chicken wings
  • 4 tbsp baking powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 5 tbsp Peri-Peri sauce
  • 5 tbsp dark soy sauce
  • 5 tbsp light brown sugar
  • 5 tbsp runny honey
  • 5 tbsp melted butter
  • 1 tbsp toasted sesame oil
  • 4 garlic cloves, finely sliced
  • 1 lemon, sliced
  • Handful of fresh parsley
  • Handful of pomegranate seeds

Instructions

1. Prepare the Wings

In a large bowl, mix baking powder, smoked paprika, salt, and black pepper. Toss the chicken wings in the mixture until fully coated.

2. Bake the Wings

Preheat the oven to 200°C (392°F). Place a wire rack over a foil-lined baking tray and arrange the wings in a single layer. Bake for 60 minutes, flipping halfway for even crisping.

3. Make the Marinade

While wings bake, combine Peri-Peri sauce, soy sauce, brown sugar, honey, melted butter, sesame oil, and sliced garlic in a bowl. Mix well and set aside.

4. Glaze the Wings

Transfer baked wings to an ovenproof dish and generously baste with the marinade. Bake for 10 minutes. Repeat basting and baking two more times until wings are sticky and caramelized.

5. Garnish and Serve

Top wings with fresh parsley, lemon slices, and pomegranate seeds. Serve hot with couscous salad or your favorite sides.
