Tender and juicy beef short ribs braised in a rich and flavorful sauce. Perfect comfort food that melts in your mouth, with a savory blend of coconut aminos, balsamic vinegar, and beef broth.

Ingredients

Bone-in beef short ribs: 2 lbs

Ghee or butter: 2 tablespoons

Onion (large, sliced): 1

Garlic (minced): 3 cloves

Tomato paste: 3 tablespoons

Coconut aminos (or soy sauce for keto): ⅓ cup

Balsamic vinegar: ⅓ cup

Beef or bone broth: 2 cups

Fresh thyme (bundle): 1 bundle

Bay leaf: 1

Flour (gluten-free, optional): 3 tablespoons

Salt and pepper: To taste

Instructions

  1. Season the beef short ribs generously with salt and pepper.
  2. Heat ghee or butter in a large Dutch oven over medium-high heat and sear the ribs until browned (about 12–15 minutes total). Remove and set aside.
  3. Add the sliced onion and garlic to the pot, sauté for 2-3 minutes until fragrant.
  4. Deglaze the pot with coconut aminos and balsamic vinegar, scraping up any caramelized bits.
  5. Stir in tomato paste and flour, then slowly whisk in beef broth to create a smooth sauce.
  6. Return the short ribs to the pot, add thyme and bay leaf. Cover and transfer to a preheated oven at 350°F (175°C).
  7. Braise the ribs for 2 hours, until the meat is tender and easily pulls away from the bone.
