Bobby Flay's creamy chicken thighs recipe features crispy, perfectly seasoned chicken thighs in a rich, velvety sauce made with shallots, garlic, chicken broth, cream, lemon juice, and fresh thyme. It's an elegant yet simple dish perfect for home cooks.

Ingredients

8 boneless, skinless chicken thighs

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

1 shallot, finely chopped

3 cloves garlic, minced

1/2 cup chicken broth

1/2 cup heavy cream

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and cook skin-side down until golden and crispy, about 5-7 minutes. Flip and cook the other side for another 5-7 minutes until cooked through. Remove and set aside.
  3. In the same skillet, add chopped shallot and minced garlic. Sauté until softened, about 2 minutes.
  4. Add chicken broth, scraping up browned bits from the skillet bottom.
  5. Stir in heavy cream and lemon juice, bring to a simmer and cook until sauce thickens slightly, about 3-5 minutes.
  6. Return chicken to the skillet, skin-side up. Sprinkle with fresh thyme leaves. Spoon sauce over the chicken and simmer for 2 more minutes to heat through.
  7. Serve chicken with sauce spooned on top, garnished with additional thyme if desired.

Notes

  • For a spicy kick, add red pepper flakes to the sauce.
  • Substitute thyme with rosemary or sage for different flavor.
  • Add sautéed mushrooms with shallots and garlic for extra depth.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently in a skillet over low heat, adding a splash of chicken broth or cream to keep sauce creamy.
  • Pat chicken dry before cooking to ensure crispy skin.
  • Bone-in thighs can be used but require longer cooking time.
  • Use half-and-half or milk as a cream substitute for a lighter sauce.
  • Serve with mashed potatoes, steamed vegetables, or a green salad.
